CHOCOLATE AVOCADO PUDIDNG

This is one of our favorite recipes for satisfying your chocolate cravings. This recipe is inspired by The Iron You and makes about 4 servings. We love to make a big batch and keep them in the fridge for when we fancy something sweet. They taste so good and contain lots of good healthy fats from the avocado.

INGREDIENTS

2 large avocados, chilled

1/2 cup full fat organic coconut milk

1/3 cup raw cacao powder

2 teaspoons vanilla extract

Optional extras:

Manuka honey, peppermint essential oil, organic orange essential oil, cacao nibs, nuts, and berries

INSTRUCTIONS

  1. Cut the avocados in half and remove the pit. Scoop out the flesh into a food processor

  2. Add the coconut milk, cacao powder and vanilla extract and blend until smooth and creamy, scraping down the sides as needed.

  3. Adjust the flavour and consistency as desired by adding manuka honey for sweetness, extra cacao powder to balance the avocado flavour, or extra coconut milk for a smoother consistency.

  4. If desired add 10 drops peppermint essential oil to make a mint chocolate pudding or 10 drops of organic orange essential oil to make a chocolate orange pudding.

  5. Spoon the mix into ramekins, cups or bowls and pop them in the fridge to harden for at least 30 minutes.

  6. You can add nuts, fruit or anything you fancy on top before eating. Enjoy!
